Like these Galaxy cookies from SweetAmbs which I am desperate to try.
Rolled Sugar Cookies
Makes approx 50 biscuits depending on size/thickness
- 170g butter
- 1 cup caster sugar
- 2 eggs
- 1/2 tsp vanilla
- 2 1/2 cups plain flour
- 1 tsp baking powder
- 1/2 tsp salt
Cream butter and sugar together. Add eggs and vanilla.
Mix in sifted flour, baking powder and salt.
Chill for minimum one hour.
Preheat Oven to 200°C and line a cookie sheet with baking paper.
Roll out dough and cut with cookie cutters.
Bake approx 5 mins until browning on top..
Royal Icing - to Decorate
- 3 tbs powdered egg whites
- 1/2 cup warm water
- 1 tsp creme of tartar
- 4 cups icing sugar
Using the whisk attachment, mix together the egg whites, water and creme of tartar.
Add the icing sugar and whisk on medium until combined.
Beat on high until thick, glossy and white - should be very stiff peaks.
Colour as required and you are ready to decorate!

Note: My 2 year old did not decorate these... He was on sprinkle duty with his dad and the mess they made was not photograph-worthy!
